Red Beans & Rice

- 2 lb dried red kidney beans
- 2-3 medium yellow or white onions chopped
- 2 large bell peppers chopped
- 1 stalk celery chopped
- 2 large cans diced tomatoes
- 2 tbsp Seasoned Salt
- 4 tbsp Worcestershire Sauce
- 2 tsp minced garlic
- 2 tbsp dried sweet basil
- 2 tsp black pepper
- 1 tbsp salt
- 5 bay leaves
- 2-3 packages smoked sausage
- Uncle Ben's Rice
Wash beans and soak overnight if desired.
Drain beans and cook until slightly tender. Drain again and return to pot.
Finely chop onions, bell peppers and celery. Add to beans.
Add all other ingredients right on top of beans and veggies.
Cover with water.
Bring bean mixture to a boil, then reduce heat to low or medium and simmer for several hours.
Add sliced sausage 30 minutes to an hour before serving.
Serve over rice.
