Red Beans & Rice

Ingredients

  • 2 lb dried red kidney beans
  • 2-3 medium yellow or white onions chopped
  • 2 large bell peppers chopped
  • 1 stalk celery chopped
  • 2 large cans diced tomatoes
  • 2 tbsp Seasoned Salt
  • 4 tbsp Worcestershire Sauce
  • 2 tsp minced garlic
  • 2 tbsp dried sweet basil
  • 2 tsp black pepper
  • 1 tbsp salt
  • 5 bay leaves
  • 2-3 packages smoked sausage
  • Uncle Ben's Rice

Instructions

  • Wash beans and soak overnight if desired.
  • Drain beans and cook until slightly tender. Drain again and return to pot.
  • Finely chop onions, bell peppers and celery. Add to beans.
  • Add all other ingredients right on top of beans and veggies.
  • Cover with water.
  • Bring bean mixture to a boil, then reduce heat to low or medium and simmer for several hours.
  • Add sliced sausage 30 minutes to an hour before serving.
  • Serve over rice.
